Snowed in so, making corned beef hash and dumplings from the remnants in my cupboards. Great cold weather food.

I had to look this one up. I like corned beef, both canned and simmered seasoned brisket and I make hash by adding the potatoes and onions, usually with left over meat. I also make dumplings occasionally but I never thought to put them together. It's sort of like chicken & dumplings but some recipes call for bully beef (canned) and some just call for corned beef (simmered brisket). Not sure which one should be used.

I generally just eat corned beef hash with toast and eggs. Can be breakfast, lunch or dinner. Great cold weather grub.

This was my version last night......I'd eaten most of it by the time the photo was taken!

Corned beef from a can?

Keeping with the cool weather comfort food theme, made a big pot of smoked ham hocks and pinto beans and baked a batch of cornbread this afternoon. Dinner will be beans & cornbread.

Yeah, canned. Not much choice when you're snowed in!

Girlfriend cooking tonight. We have some frozen prawns in the freezer and some chicken in the fridge so, my hopes are high!

I have to confess to bailing on the mango salad. I heard Mrs N order not too spicy but they must have chosen to ignore her

Mrs. S orders that occasionally. They deliver the tao than (charcoal cooker), the grill tops, the meat & vegetables and the broth. They come around the next day to pick up the grills. Pretty handy if you don't want to fool with gearing everything up yourself.
