Was trying to decide what to do with the extra corned beef hash so just pan fried it to put a crispy coating on the bottom. Thanks to Niggly I had already decided I wanted baked beans so put some in the oven with onion & bacon. Tossed in some homemade bread & butter pickles and some oven toast and wound up with a very satisfying dinner.

How do you construct your corn beef hash?
My recipe, from my mum, is get a clear oven proof dish at least 4” deep & layer thinly sliced ingredients.
Start with corned beef, then sliced onions, a large spoonful of baked beans in tomato sauce, slices of champignons mushrooms, sliced potato & repeat. You should be able to get 3 layers. Add two heaped spoonfuls of beef gravy granules in cold water so it comes up about an inch in the dish then sprinkle grated cheddar on top. Cover & cook slowly for about an hour or until the gravy mix has soaked in/evaporated so it’s not too wet.
In fact I was drooling just typing this, think I’ll have to get the ingredients while out shopping tomorrow. I can christen an oven, I’ve only used the grill for toast so far

Your mum's recipe sounds delicious. The only corned beef hash I've ever made or eaten is made on the stove top and would be similar to this recipe.
Corned Beef Hash
Yields: 4-6 servings
Ingredients:
2 T unsalted butter
1 medium onion, diced (about 1 C)
16 oz cooked corned beef, chopped (about 2 C)
2 medium potatoes, peeled and diced (about 2-3 C)
Optional: 1 medium bell pepper, diced
kosher salt and fresh black ground pepper to taste
1 tablespoon of Worcestershire sauce
fresh parsley, chopped
Directions:
Melt the butter in a large skillet over medium heat. Add the onion (and optionally the bell peppers) and cook a few minutes, until translucent.
Mix in the chopped corned beef and potatoes. Spread out evenly over the pan. Increase the heat to high and press down on the mixture with a metal spatula. Try not to stir the potatoes and beef too much, but allow them to nicely brown and then flip to cook the other side.
Season with salt and pepper to taste, and garnish with parsley (I used scallions because that was all I had and I just wanted to give it some color).
Actually, the recipe used by your mom sounds like baked corned beef hash which is more like a casserole. I've not had that but it really sounds tasty.

Cool, overcast day perfect for spaghetti bolognese and toasted parmesan garlic bread. Mrs. S makes a killer spag-bol. I do the garlic bread.
