All of this past Thanksgiving feasting put me over the edge and I had to have something similar. So, for a late lunch / early dinner I roasted some chicken breasts and made cornbread dressing (stuffing), mashed potatoes & gravy and a few peas. It really hit the spot.

Yeah, I may do again a month from now. It all turned out really great. Chicken breasts are easy to roast in the oven and I've been making cornbread dressing and gravy for decades. Not a lot of fuss and I don't miss the leftover turkey all that much.

Chili prawn and chicken tikka masala are always good choices. Here in Udon I usually eat Indian food at home but one of the things I can never match is the bread. In my experience, the best naan, paratha, chapatis etc. comes from the restaurants.

Braised pork collar, potatoes, celery, carrots and onion gravy. Key lime pie (using Thai limes) for dessert.

This evening the missus made one of my all-time favorites. แกงอ่อมหมูใส่ฟักทอง (
gaeng om muu sai fak tong). Isaan curry with thinly sliced pork loin, fresh dill, basil and pumpkin served
khao niao mai(new harvest sticky rice).
