This evening Mrs. S made khai yat sai (ไข่ยัดไส้). Another of my favorites.

You betcha. From Wiki: Khai yat sai or kai yat sai (Thai: ไข่ยัดไส้, RTGS: khai yat sai, pronounced [kʰàj ját sâj]) is a type of Thai omelette. The name means 'stuffed eggs'. The egg is cooked lightly, topped with various ingredients (such as minced beef or pork, peas, onion, spring onion, carrots, tomatoes), seasoned with fish sauce and/or oyster sauce, and then folded over.
Mae Ya restaurant used to make a pretty good one but I've not eaten there lately. Mrs. S does a fine job and I like hers the best. I imagine there are several restaurants in Udon do a good khai yat sai.

That takes me back. That was the first restaurant I went to in Udon about 15 years ago when I was still wet behind the ears. Went there because it was no 1 on Trip Advisor and thought I would impress my then girlfriend.
She had Som Tam and I had a Club Sandwich.

We used to go there fairly often as years back, it was indeed, considered to be one of the best, if not the best, restaurant in Udon Thani. Back then it was the only place you could get really good ice cream for dessert. I guess it's still doing okay but we haven't been there for quite awhile.
